I Pastini is Located in the heart of Valle d’Itria between Martina Franca and Locorotondo in the region of Puglia – the heel of Italy’s boot .

Puglia is the home of the cone-shaped Trulli houses, olive groves, gently undulating countryside and of course wine!

The IPastini winery was established in 1996 and is managed by Carparelli family. 

The name I Pastini derives from the Latin Pastinum, which literally means “hoe” and poetically describes the rugged landscape destined for vine cultivation.

Gianni, the youngest of this vine growing family continues a journey of exploration where modern production techniques rub shoulders with historical farming traditions  unleashing wonderfully expressive wines.

Located 350m above sea level; viticulture in this arid, rocky and calcareous terrain of Valle d’Itria is a challenging pursuit. 

The terrain conspires with constant sunlight, uniform radiation and natural ventilation to create a formidable terroir that confirms I Pastini as the beating heart of Apulia’s white wine production.

In an area of 15 hectares, Minutolo, Verdeca, Bianco d’Alessano, Primitivo and Susumaniello are the local grape varieties cultivated from these extraordinary vines to make wonderful wines

Eschewing chemicals and emphasizing sustainable farming; the wheels of this organically focused, family estate turn through sheer will, passion and hard work. 

The terroir provides the perfect growth of healthy grapes, a manual harvest undertaken by expert local labor selects the best of these and the finely evolved production does the rest!
