It is a natural sparkling wine obtained with the Charmat method or Martinotti method, that is, with refermentation in an autoclave at controlled pressure and temperature following the fermentation of the base wine. 
This method allows you to naturally trap the CO2 bubbles that develop from the transformation of sugars into alcohol by the yeasts.

 
Verdeca grapes, which are characterised by acidity, freshness, and flavour, to produce the I Pàstini sparkling wine.
I Pàstini brut is a fresh and immediate sparkling wine characterized by the olfactory profile of Verdeca.
 
With a fine, elegant and intense perlage, with floral aromas and notes of green apple and citrus fruits typical of the most traditional Verdeca.  
Fresh, lively and very versatile: it pairs well with any meal, especially fish-based dishes, as an aperitif and with desserts, especially leavened ones and creams (the bubbles help to “degrease” the butteriness of the dessert).

Located 350m above sea level; viticulture in this arid, rocky and calcareous terrain of Valle d’Itria is a challenging pursuit. 

The terrain conspires with constant sunlight, uniform radiation and natural ventilation to create a formidable terroir that confirms I Pastini as the beating heart of Apulia’s white wine production.

In an area of 15 hectares, Minutolo, Verdeca, Bianco d’Alessano, Primitivo and Susumaniello are the local grape varieties cultivated from these extraordinary vines to make wonderful wines

Eschewing chemicals and emphasizing sustainable farming; the wheels of this organically focused, family estate turn through sheer will, passion and hard work. 

The terroir provides the perfect growth of healthy grapes, a manual harvest undertaken by expert local labor selects the best of these and the finely evolved production does the rest!
