Born from the blend of the three native white vines par excellence of the Itria Valley: 60% Verdeca, 35% Bianco d'Alessano and 5% Minutolo.
 
L'Antico is a DOP white wine produced by local growers for thousands of years. As the name suggests, it is vinified according to tradition: the cultivation system is the sapling one, the three grape varieties are combined in the quantities established from the planting, then they are cared for, harvested, destemmed and vinified together following the most modern winemaking techniques. 
It is an ancient technique that requires great experience as the grapes are harvested together even though they have different ripening times, this process allows for the production of an extraordinarily balanced wine.

 
L'Antico has a straw yellow colour with light greenish reflections, characterised by fruity hints, a dry and full flavour, which lingers in the mouth for a long time.
A wine to be drunk young, excellent as an aperitif, very suitable for pairing with fish-based dishes, shellfish and seafood.

Located 350m above sea level; viticulture in this arid, rocky and calcareous terrain of Valle d’Itria is a challenging pursuit. 

The terrain conspires with constant sunlight, uniform radiation and natural ventilation to create a formidable terroir that confirms I Pastini as the beating heart of Apulia’s white wine production.

In an area of 15 hectares, Minutolo, Verdeca, Bianco d’Alessano, Primitivo and Susumaniello are the local grape varieties cultivated from these extraordinary vines to make wonderful wines

Eschewing chemicals and emphasizing sustainable farming; the wheels of this organically focused, family estate turn through sheer will, passion and hard work. 

The terroir provides the perfect growth of healthy grapes, a manual harvest undertaken by expert local labor selects the best of these and the finely evolved production does the rest!
