In the mouth there is correspondence with the notes perceived on the nose. Correct structure, elegance and softness.
The grapes harvested when fully ripe are left to ferment in stainless steel tanks for approximately two weeks, during which pumping over is carried out in order to extract colouring substances and tannins from the skins.
Once this step is completed and the optimal alcohol content has been reached, the wine is separated from the marc and left to mature in a steel tank.
During this period of time the wine reaches its microbiological equilibrium and our only concern is to carry out racking to allow the separation of the sediments formed on the lower part of the tank.
After refrigeration the Cabernet Sauvignon is filtered and bottled.
It goes well with grilled meat and mature cheeses.
